Pea Quenelles

Is There a More Fancy Look For Peas?

Simple, tasty and glamorous looking pea quenelles.

To be honest they are really not much more than a fancy way of serving mushy peas. But if you do not tell anyone, I am sure no one will notice…

These make a great side dish for a dinner party or addition to your regular weeknight dinners.

Ingredients
Serves 4

400g frozen peas
1 tbsp mint, chopped
Salt, pepper

Recipe

  1. Bring water to the boil.
  2. Briefly blanch the peas for about 4 minutes.
  3. Drain the peas and place them into a food processor.
  4. Add mint, salt, pepper.
  5. Process until just smooth.
  6. Take a heaped table spoon of peas a time and using your hands form quenelles.
  7. Serve immediately.

Thank you for being honest….”they are really not much more than a fancy way of serving mushy peas” the only problem is I have never had to disguise mushy peas, but I would love to try them. I love eating whole peas but no harm in trying this too!
