Chickpea Nibbles Roasted
A while back, one of my dearest friends asked me to post some healthy snack recipes. I am not really one for snacking, so it took me a while to come up with something. But I finally discovered a fabulously tasty, easy and above all healthy snack: Roasted Chickpeas
When you bite into these chickpeas, it is almost like biting into a nut ….but then the center is much softer and a little chewy. Very moreish! ….and the fact that you are eating healthy legumes means that you really should have another hand-full ….
I also discovered that roasted chickpeas are a typical snack in Ethiopia. (Traditionally they are roasted in a pan without any spices.) And have to say, these chickpeas go as well with a cold beer as they work as an appetizer for an Ethiopia feast (ok, that is all not quite traditional, but very tasty nonetheless).
Ingredients
(from ‘This Chick Cooks’)
1 can chick peas (garbanzo beans) or about 300g cooked beans
1 ½ tbsp extra virgin olive oil
½ tsp salt
½ tsp paprika
¼ tsp cumin
pinch of cayenne
optional: ½ tsp garlic powder
Recipe
- Preheat oven to 200C (400F).
- Mix all ingredients in a bowl until the chick peas are evenly coated.
- Spread chickpeas on a baking sheet and bake for about 20 minutes. Stir and continue baking for another 10-15 min, until crispy.
